Bakery gluten-free compositions

Purpose
Gluten-free compositions of the series «Vita» is a special-purpose flour.

The product is aimed at both industrial application when making bakery and confectionary and baking at home conditions with low protein to feed patients with proteometabolism disorders (phenylketonuria).

The compositions are prepared for sick people, especially children with protein metabolism disorders (celiac disease, phenylketonuria, chronic renal insufficiency). 4 sorts of mixtures are produced Vita F, Vita M, Vita C, Vita R.

Characteristics

  • Vita F and Vita M are gluten-free mixtures in the form of dry powder-like compositions preliminary prepared from grain powders, amylums, thickening agents. They are used in making low- protein confectionary and bakery products to feed patients with proteometabolism disorders (phenylketonuria). Phenylketonuria is a genetic stipulated disease characterizing with liver ferment deficit in phenylalanine hydroxylase. As a result toxic phenylalanine products are accumulating in organism leading to micropsychia.
  • Diet- therapy is the principle method to cure this disease. It reduces dietary protein and phenylalanine to minimal age need.
  • Mixtures Vita F and Vita M contain 2,8 g and 0,77 g of protein, respectively.
  • The mixtures are designed for both industrial procession when making bakery and confectionary products, and for selling to retail trade system for baking products in home conditions.

When preparing the compositions it was taken into account that the contents of active substances in 100 g. of mixture must not exceed the consumption rates of therapeutic product.
